Chef Peter Leigh Gallin is owner of Applewood Northwest Cuisine and Catering and is a devotee to fresh, healthy northwest cuisine.
He is a graduate of the California Culinary Academy located in San Francisco, California with a curriculum focused on classical French cooking techniques. He has worked as a chef since graduation in 1988, both as a caterer as well as at numerous restaurants.
Peter is the son of an anthropologist and a sociologist and is a world traveler who has spent time living in Asia and all over North America, including the east and west coast, as well as the deep south, southwest and also the mid-west and northwest. Better living through healthy eating is his motto.
General Manager, Steven Waddle, is an asset in the day-to-day operations of the restaurant and grew up assisting the family in the running of the former Portland iconic restaurant "Waddle's."
Teresa Johnson, catering event coordinator, rounds out the Applewood executive staff with true professionalism.

I love this restaraunt! I wasn't sure what to expect the first time I walked in, but the food was absolutely wonderful and we had great service. We have been in several times since and had very consistant food and service. I would reccomend this restaraunt to anyone!

we have been coming to Applewood for several years and have never been disappointed! The new menu provides plenty of options offering both ala carte and entrees. Awesome wine selection featuring many NW wines. Truly vancouver's hidden gem!!

Not worth the price. Food is not too tasty. Service is bad. Will never go again. It's a shame to call it a Northwest cuisine.

I shop at the strip mall where they are located and decided to try it. My husband and I went on a Thursday vening, the staff did not greet us for several minuites. Not becaause they where busy, but because the only waiter was engrossed in a conversation with 2 female customers (The only other 2 people in the place). After looking over at us several times, finaly came to seat us. I ordered the pasta special, my husband had the steak. The pasta was overdone the steak was tough and impossible to cut. The waiter was rude and never checked on us. This place is overpriced, food quality is poor, staff is rude! Hard to call this fine dinning.

We stopped by Applewood for dinner on Saturday night and were very impressed. The server was attentive and friendly, and the food couldn't have been better. The chef even made a tableside appearance to check on our dinners, which were delightful. We'll definitately be back again.
